Taco or Burrito Meat
Meat:
1 pounds ground beef
1/2 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon minced garlic
1/2 crushed red chili pepper
1/2 bunch cilantro leaves, chopped
Sauce:
2 tablespoons olive oil
1 medium onions, chopped
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 jalapeño, minced
1/2 crushed red chili pepper
1 small green pepper, chopped
1 small tomato, chopped
1/2 bunch cilantro leaves, chopped
In a medium pan, season the beef with the salt, pepper, garlic, and red chili pepper. Cook the beef with
the cilantro over medium heat until no longer pink; drain and set aside. In a large pot,
heat oil; sauté onions with the salt and black pepper until tender. Add jalapeño and
crushed red chili pepper; cook for 2 minutes. Add green pepper, tomato, and cilantro.
Cook until tender. Add browned beef. Stir well. Cove and cook for about 5 minutes.
Yield: 8 to 10 servings
